• roasted fillet veal with oxtail dumplings, porcini mushroom ragout and celeriac puree

• crispy confit duck leg with pancetta, slow cooked red cabbage and candied hazelnuts

• scotch fillet of beef with brocolli and potato smash, italian ratouillie and red wine sauce

• roasted lamb rump and sweet potato puree with a honey & chestnut glaze

•  pan-fried fresh ocean trout with prosciutto, puy lentil chowder, wilted kale and natural yogurt.
